Ingredientes
1 taza de arroz basmati, enjuagado y remojado
1 taza de agua preferentemente del remojo
1/4 de cucharadita de sal
1 cucharadita de aceite de coco
1/4 de pieza de cebolla blanca fileteada
2 dientes de ajo finamente picado
2 tazas de espinaca picada
2 cucharaditas de curry en polvo
1 1/4 tazas de leche de coco reducida en grasa
1/4 de taza de garbanzo cocido
1 taza de haba
2 cucharadas de miel
2 cucharadas de Salsa Sriracha
1/2 cucharada de sal

La salsa sriracha es una sensación en la cocina a nivel mundial, esta salsa picante procedente de Tailandia es una delicia, pero es bastante fuerte, puedes no utilizarla en tu receta si no deseas el sabor picante.
Cocinemos
Empieza cociendo tu arroz en una olla con el agua en la que lo has remojado, agrega sal y cocina por espacio de 20 minutos a fuego bajo, tapado. Retira del fuego y deja reposar hasta que absorba todo el líquido, luego escurre y reserva.

Ahora en una sartén a fuego medio fríe la cebolla en aceite de coco hasta que esté transparente, luego agrega el ajo y las espinacas y cocina hasta que estas se encojan. Añade el curry, la leche de coco, los garbanzos y las habas. Cocina por 25 minutos a fuego medio, luego agrega la miel, la sriracha y sal al gusto. Sirve con el arroz y disfruta caliente.
